Produced from shelled Carpino beans grown by the Cannarozzi Michele farm on its own land in Carpino (Gargano) .
The area, in the Gargano National Park , is suited to legumes thanks to its microclimate, clayey-calcareous soils and quality water .
The native cultivar “fava di Carpino” grows here, which is different due to the dimple in the lower part of the seed .
It is medium-small , green when harvested and becomes sand-coloured when dried .
Preparation — Soak for 2 hours in hot water , then rinse and boil slowly in cold water for a few hours; add only hot water if necessary. Salt at the end of cooking .
