Casale1485 Chickpea Flour is obtained by stone-grinding dried Italian chickpeas .

It is mainly used to make focaccia, fried or baked , known as farinata or cecina .

Chickpea flour can also be used to prepare panelle , panissa , rustic crepes , biscuits and bread substitutes .

Since it comes from legumes , and not from cereals, it is mixed with wheat flour to improve the protein intake .

In vegan diets it is often used as an egg substitute to prepare omelettes and crepes .
